This cookies are made of oats that are a good source of carbs and fiber, including the powerful fiber beta-glucan. You definitely need this as your healthy snack on the go.
2 flax egg (2 tbsp ground flaxseed, 5 tbsp water, let sit)
2 1/2 cups oats
3/4 cup almond meal
1/4 cup molasses
1/4 cup cocoa powder
1 tsp baking powder
1 tsp cinnamon powder
1/2 cup syrup sweetener
1 tsp vanila extract
Combine all dry ingredients in a bowl.
Mix all wet ingredients in a separate bowl then add into the dry mixture. Work until all combined. Shape with ice cream scoop resulting equal size. Bake for 8-10 minutes on preheated oven (180C).
Let cool then drizzle melted chocolate.
I make granola out of this baked cookies, here’s how:
you wanna break em into chunks and coat them with melted chocolate until it sticks together becoming bigger chunks.
feel free to add nuts or seeds and other toppings you prefer. Bake until it is crunchy (I just check the oven once in a while). Let cool then put it on air tight jar or container.
