Now you too can eat like a Millionaire thanks to Candice’s epic recipe for Vegan Millionaire’s Shortbread.

The word on the street is that Millionaire’s Shortbread was invented in 1692 by a millionaire who spent his fortune on shortbread covered in caramel. It greatly resembles the same flavoring you find in a typical Twix bar. It is also known as caramel shortbread, caramel shortcake, caramel squares and even millionaire’s slice. The first known recipes and references are in Australian cookbooks from the 1970’s.
To create this delightful dessert you will want to get out a good sized mixing bowl for your dry ingredients. In that bowl you will combine flour, baking powder and pink Himalayan rock salt. You will whisk all of these together thoroughly. Once you have all your dry ingredients combined it’s time to move on to your wet ingredients.
In your mixing bowl, provided you have a mixer similar to the one seen in the video, add 2 sticks of creamy vegan butter and sugar. You can also use a hand mixer and a large metal mixing bowl if that’s all you have on hand. Combine these ingredients mixing them well. Now add your dry ingredients to your wet ingredients continuing to mix as you go until you reach a consistency similar to what you see in the video. You want them to resemble small crumbles.
When you reach the stage where you have some good looking crumbles set your mixer to low and add vanilla extract and a bit of almond, soy, or rice milk. Let that all mix together for a short while longer and then pour the contents into a parchment paper lined casserole dish. You will want to press down on the mixture as seen in the video being sure it is uniformly flattened. Preheat your oven to 350′ and put your shortbread in the oven for 20 minutes.
Now it’s time to make our caramel. In a sauce-pot over medium heat combine vegan butter, condensed coconut milk, brown rice syrup, and brown sugar. Let that cook, stirring it frequently, for about 20 minutes. It needs to reach 250′ F so be sure you have your cooking thermometer on hand. At the end of 20 minutes stir in some vanilla. Pull your cooked shortbread out of the oven and pour your freshly created caramel sauce right over the top.
The last piece of this puzzle is the chocolate layer we need to put on top of our caramel. Take 2 packages of vegan chocolate chips and put them in a microwave safe bowl. Melt them in 30 second intervals until you reach your desired chocolate sauce consistency. Once melted pour your chocolate out evenly across the top of your caramel covered shortbread. Use a wooden spoon to ensure you get truly even chocolate coverage. Put this into the fridge for 3 hours. After 3 hours in the fridge pull out your Vegan Millionaire’s Shortbread and using a warm knife cut it into equal sized squares.
That is all there is to making the infamously delicious Millionaire’s Shortbread.
