Momofuku Birthday Cake Recipe VEGAN and GLUTEN FREE – Dolled Up Desserts

It’s Katarina’s birthday on April 15th and she decided that her birthday cake this year would be the Momofuku Milk Bar Birthday Cake. The issue is, we live in Hamilton, and can’t get to NYC to pick it up, nor can we actually eat the original Milk Bar cake? So we brought Momofuku to our test kitchen, and now, you can make this deliciously classic gluten free and vegan vanillia funfetti cake right at home, exactly how the boss ladies at Momofuku do!

INGREDIENTS

a) Cake Crumb
– 1/2 cup granulated white sugar;
– 1 1/2 tbsp light brown sugar;
– 3/4 cup rice based all purpose gluten free flour (we used Bob’s Red Mill 1-1);
– 1/2 tsp baking powder;
– 1/2 tsp salt;
– 2 tbsp rainbow sprinkles (Sweetapolita has GF/V sprinkles!);
– 1/4 cup grapeseed/canola/sunflower oil;
– 1 tbsp clear vanilla extract (use Wilton!);

b) Cake
– One Dolled Up Desserts Cloud Nine Vanilla Cake Mix;
– 4 tbsp non-dairy butter, room temperature;
– 1/3 cup vegetable shortening;
– 1/2 cup granulated white sugar;
– 1 1/2 cups soy milk (or hemp milk, must be higher protein milk);
– 1 tbsp apple cider vinegar;
– 1/3 cup grapeseed/canola/sunflower oil;
– 1 tbsp clear vanilla extract;
– 3/4 tsp salt;
– 1/4 cup + 2 tbsp sprinkles;

c) Frosting
– 8 tbsp non-dairy butter, room temperature;
– 1/4 cup vegetable shortening;
– 2 oz (about a quarter of a package) non-dairy cream cheese;
– 2 tbsp glucose;
– 1 tbsp clear vanilla extract;
– 1 1/4 cups powdered sugar;
– 1/2 tsp salt;
– pinch of baking powder;
– pinch of citric acid (This is critical and changes the flavour game!);

d) Vanilla Soak
– 1/4 cup non-dairy milk;
– 1 tbsp clear vanilla extract;

  2. I love your recipes. Would it be possible to include the ingredients for people who don’t have access to your products. I understand you want to advertise them and they look amazing, but it would be great to have a list of ingredients that are in them and a method. Thanks xx

    1. Liss girl I feel you. Shipping is sooooo expensive, it’s an issue we are trying to remedy. I honestly don’t get how they can charge that much to slap a small box of goodies down on a plane that they don’t even have to think twice about. I know our stuff doesn’t have US duty. I’d have to look into it for the UK. Our goal is to affordable get it there somehow soon!

    2. Dolled Up Desserts hi. Thank you for replying. I’m in the UK and although many US sites post to the UK, by the time you’ve paid international postage and import duty, it’s just too expensive, it’s the same with Makeup. There’s so many US cosmetic companies that I want to order from. 😁💕👍🏻
