Protein muffins recipe, healthy vegan cake!

So easy to make and perfect breakfast on the go!

80 gr almond flour
40 gr protein Powder
1 tbsp of linseed meal
1 mashed banana
150 gr coconut milk
1 tsp bicarbonate of soda
1 tbsp apple cider vinegar
30 gr coconut sugar or 1 tbsp powdered stevia if your protein powder is unsweetened (mine already has stevia )
Mash the banana with a work and add almond flour, following by 100 gr of coconut milk. Stir till everything starts to come together.
Add linseeds, protein powder and the rest of coconut milk work the dough until everything is evenly incorporated.
Lastly, add bicarb of soda and apple cider vinegar, mix briefly and fill your baking molds till 2/3 high
Bake in preheated to 180 degrees oven for 17-20 minutes or until golden brown.
