In this video I make some raw vegan Pumpkin Spice cookies. This is a super easy recipe that uses a few healthy ingredients. If you don not have a dehydrator you could try baking them at 350°F for 12-14 minutes. They’re nice and chewy and have just the right amount of sweetness.
1 cup pumpkin puree
1/4 cup almond butter
3 tablespoons maple syrup
1/2 almond flour
1/4 cup coconut flour
1 teaspoon pumpkin pie spice
1/4 teaspoon sea salt
1/4 cup raisins or crystallized ginger
Whisk wet ingredients together in a large bowl.
Add dry ingredients and stir everything together well.
Form into little cookies just under the size of 1/4 cup.
Dehydrate for 12-18 hours at 110-115°F.
